A three-year varsity letterman in football, Joe Unis played on teams that never lost a district game and that won back-to-back TCIL state titles in 1974 and 1975. During his Ranger career, Unis started at quarterback, safety, cornerback, and kicker. Elected a team captain as a senior, he was voted the Ranger Heart Award winner by his teammates. Selected as the Texas Catholic and Dallas Morning News Sophomore of the Year, Unis was named all-district three times and all-state twice.

After graduating from Jesuit with honors, Unis attended the University of Notre Dame where he was a place-kicker on the football team. Spending all four years on the Irish varsity, including the 1977 national championship team, two Cotton Bowl victories, and a victory in the 1976 Gator Bowl, Unis received the Top Student-Athlete award as a senior.

In that final Cotton Bowl appearance, Unis kicked the winning point with no time left on the clock after future NFL legend Joe Montana had led the team to what is considered one of the greatest comebacks in Notre Dame history. The game was later dubbed one of the 100 greatest college football games ever played by College Football News.
