Eddie Joseph was a versatile athlete at Jesuit Dallas, and played football at Oklahoma University and Austin College. He served for three years in the US Marine Corps, playing at Camp Pendleton, or he was named to the All-Marine, All-Navy, and All-Service teams. Joseph's first football coaching job was under Gordon Wood in Victoria, Texas. He then coached at McGuiness High School in Oklahoma City, winning four straight Catholic State Championships and was twice named Coach of the Year.

Joseph returned to Texas becoming head coach at Wharton High School, where he remained for 14 years while also serving as athletic director. Leaving active coaching with a career record of 138–54-6, in 15 of his 19 years as head coach, Joseph's teams finished either first or second in district.

Joseph served on the board and chaired the ethics committee of the Texas High School Coaches Association from 1976 to 1979, serving as President from 1979 to 1980. In 1981, he became a full-time employee of the THSCA and served as executive vice president for the more than 15,000-member organization. He was inducted into the THSCA Hall of Honor in 1983 it was inducted into the Texas High School Football Hall of Fame in 1994. The National Football Foundation and Collegiate Hall of Fame honored Joseph for his "contributions to amateur football" in 1994. In addition, he served on the State Advisory Committee for the Fellowship of Christian Athletes and served as chairman for the nominating committee for the Texas High School Football Hall of Fame.
